What sets our product above the rest?It is well known that grapes that are
harvested from vineyards contain all the substances that influence
wine quality. Furthermore, pressing is the main process by which grape
juice and solids are separated. During this process, extraction of
phenols, which affect bitterness in the wine, increase. Most of these
compounds come from the stems, seeds and skins. The reduction of the
total phenols, in the juice, is important in producing wines with a
desirable aroma and taste. The grape varieties condition of grape,
maturity and treatment of grapes and must, determine the total content
of phenols. Actually, any mechanical operation can increase, the total
non-soluble solids, and therefore the total phenols, which causes
increased bitterness and disharmony in the wine. Of course, a certain
amount of phenols is very important to express varietal character in
wine, but as we mentioned before, excess makes the wine bitter and
